Ingredients

  • Basmati rice - 150 grams
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Vegetable broth - 300 ml
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish
  • Olive oil - 2 tablespoons
  • Peas - 100 grams, frozen or fresh
  • Bell pepper - 1 small, diced

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, grated ginger, cumin seeds, curry powder, and turmeric. Sauté for another 2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the spice mixture.
  5. Pour in the vegetable broth and coconut milk, and add salt and pepper to taste. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  7. In the last 5 minutes of cooking, add the peas and diced bell pepper to the rice, mixing gently.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
