- Vegetable broth - 500 ml
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Shallots - 50 grams, minced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the quinoa under cold water to remove any bitterness, then drain.
- In a saucepan, heat the olive oil over medium heat and sauté the minced shallots and garlic until translucent, about 2-3 minutes.
- Add the diced zucchini and red bell pepper to the pan, cooking for an additional 5 minutes until softened.
- Stir in the rinsed quinoa, chopped thyme, salt, and pepper, mixing well to combine.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- Serve warm, garnished with fresh parsley.
