  • Quinoa - 150 grams
  • Vegetable broth - 500 ml
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Shallots - 50 grams, minced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the quinoa under cold water to remove any bitterness, then drain.
  2. In a saucepan, heat the olive oil over medium heat and sauté the minced shallots and garlic until translucent, about 2-3 minutes.
  3. Add the diced zucchini and red bell pepper to the pan, cooking for an additional 5 minutes until softened.
  4. Stir in the rinsed quinoa, chopped thyme, salt, and pepper, mixing well to combine.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  7. Serve warm, garnished with fresh parsley.
