Ingredients

  • Cauliflower - 400 grams
  • Butter - 30 grams
  • Heavy cream - 60 ml
  • Garlic - 1 clove, minced
  • Shallot - 1 small, finely chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cut the cauliflower into florets and steam them for about 10 minutes until tender.
  2. In a skillet, melt the butter over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Remove the steamed cauliflower from the steamer and transfer it to a food processor. Add the sautéed garlic and shallot mixture, heavy cream, salt, and pepper.
  4. Blend until smooth and creamy, adjusting seasoning to taste. If the mixture is too thick, add a little more heavy cream.
  5. Transfer the cauliflower rice to a serving dish and stir in the chopped parsley before serving.
