Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower, and cut it into florets.
- Place the cauliflower florets in a food processor and pulse until they resemble rice grains. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and sauté for another 1 minute until fragrant.
- Stir in the riced cauliflower and cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth, add salt and pepper, and let it simmer for an additional 10-12 minutes until the cauliflower is tender and the broth is mostly absorbed.
- Remove from heat, stir in the chopped parsley and lemon juice, and adjust seasoning if necessary.
- Serve warm as a side dish or a base for your favorite protein.
