Ingredients

  • Camargue red rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1, diced
  • Zucchini - 1, diced
  • Cherry tomatoes - 150 grams, halved
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Camargue red rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the vegetable broth and bring it to a boil.
  3. Once boiling, add the rinsed rice, reduce heat to low, cover, and simmer for 30 minutes until rice is tender and liquid is absorbed.
  4. While the rice is cooking, heat olive oil in a large skillet over medium heat.
  5. Add the chopped shallot and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  6. Stir in the diced bell pepper and zucchini, cooking for another 5-7 minutes until the vegetables are tender.
  7. Add the halved cherry tomatoes, fresh thyme, salt, and black pepper, cooking for an additional 2-3 minutes until tomatoes are warmed through.
  8. Once the rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables.
  9. Toss everything together gently, adjusting seasoning if necessary, and cook for an additional 2 minutes to combine flavors.
  10. Remove from heat, sprinkle with fresh parsley, and serve warm.
