- Vegetable broth - 250 milliliters
- Thyme - 1 teaspoon, dried
- Parsley - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice; set aside.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the riced cauliflower to the saucepan, stirring to combine with the shallot and garlic.
- Pour in the vegetable broth and add the dried thyme, salt, and black pepper. Stir well and bring to a gentle simmer.
- Cover the saucepan and cook for about 10-12 minutes, or until the cauliflower is tender and has absorbed most of the liquid.
- Remove from heat and fluff the pilaf with a fork. Stir in the chopped parsley and lemon zest before serving.
