Ingredients

  • Cauliflower - 300 grams

  • Vegetable broth - 250 milliliters
  • Thyme - 1 teaspoon, dried
  • Parsley - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon zest - 1 teaspoon

Steps

  1. Cut the cauliflower into florets and pulse in a food processor until it resembles rice; set aside.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the riced cauliflower to the saucepan, stirring to combine with the shallot and garlic.
  4. Pour in the vegetable broth and add the dried thyme, salt, and black pepper. Stir well and bring to a gentle simmer.
  5. Cover the saucepan and cook for about 10-12 minutes, or until the cauliflower is tender and has absorbed most of the liquid.
  6. Remove from heat and fluff the pilaf with a fork. Stir in the chopped parsley and lemon zest before serving.
