  • Cauliflower - 300 grams, riced

  • Shallots - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Vegetable broth - 250 milliliters
  • Heavy cream - 50 milliliters
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped shallots and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
  3. Stir in the riced cauliflower and cook for another 2-3 minutes until it begins to soften.
  4. Pour in the vegetable broth, bringing the mixture to a simmer, and cook for 5-7 minutes until the cauliflower is tender and most of the liquid is absorbed.
  5. Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese until creamy.
  6. Season with salt and black pepper to taste, then remove from heat.
  7. Garnish with fresh parsley before serving.
