- Basmati rice - 150 grams
- Chicken breast, diced - 150 grams
- Carrot, diced - 1 medium
- Green peas, frozen - 100 grams
- Red bell pepper, diced - 1/2 medium
- Soy sauce, low sodium - 2 tablespoons
- Olive oil - 1 tablespoon
- Garlic, minced - 1 clove
- Spring onion, chopped - 1 stalk
- Black pepper - to taste
- Sesame oil - 1 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions, using about 300 ml of water, and set aside once done.
- In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced chicken breast to the skillet and cook for about 5-7 minutes until browned and cooked through. Season with black pepper.
- Stir in the diced carrot and red bell pepper, cooking for another 3-4 minutes until they start to soften.
- Add the frozen green peas and continue to cook for an additional 2-3 minutes, mixing well.
- Add the cooked rice to the skillet and pour in the low sodium soy sauce and sesame oil. Stir everything together until well combined and heated through, about 2-3 minutes.
- Finish by adding the chopped spring onion, mix well, and serve hot.
