Ingredients

  • Basmati rice - 150 grams
  • Chicken breast, diced - 150 grams
  • Carrot, diced - 1 medium
  • Green peas, frozen - 100 grams
  • Red bell pepper, diced - 1/2 medium
  • Soy sauce, low sodium - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic, minced - 1 clove
  • Spring onion, chopped - 1 stalk
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions, using about 300 ml of water, and set aside once done.
  2. In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced chicken breast to the skillet and cook for about 5-7 minutes until browned and cooked through. Season with black pepper.
  4. Stir in the diced carrot and red bell pepper, cooking for another 3-4 minutes until they start to soften.
  5. Add the frozen green peas and continue to cook for an additional 2-3 minutes, mixing well.
  6. Add the cooked rice to the skillet and pour in the low sodium soy sauce and sesame oil. Stir everything together until well combined and heated through, about 2-3 minutes.
  7. Finish by adding the chopped spring onion, mix well, and serve hot.
