Ingredients

  • Jasmine rice - 150 grams
  • Chicken breast - 150 grams, diced
  • Eggs - 2, beaten
  • Green peas - 100 grams, frozen
  • Carrot - 1 medium, diced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Allow it to cool.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Push the chicken to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the chicken.
  4. Add the diced carrot and frozen green peas to the skillet, stirring for about 3-4 minutes until the vegetables are tender.
  5. Add the cooked rice to the skillet, then pour in the soy sauce and sesame oil. Stir everything together until well combined and heated through.
  6. Finally, add the chopped spring onions and mix well. Taste and adjust seasoning if necessary. Serve hot.
