- Jasmine rice - 150 grams
- Chicken breast - 150 grams, diced
- Eggs - 2, beaten
- Green peas - 100 grams, frozen
- Carrot - 1 medium, diced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Allow it to cool.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
- Push the chicken to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the chicken.
- Add the diced carrot and frozen green peas to the skillet, stirring for about 3-4 minutes until the vegetables are tender.
- Add the cooked rice to the skillet, then pour in the soy sauce and sesame oil. Stir everything together until well combined and heated through.
- Finally, add the chopped spring onions and mix well. Taste and adjust seasoning if necessary. Serve hot.
