- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cinnamon powder - 1/4 teaspoon
- Salt - 1/2 teaspoon (or to taste)
- Black pepper - 1/4 teaspoon
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, diced carrot, and diced bell pepper. Cook for another 5 minutes, stirring occasionally, until the vegetables soften.
- Add the cumin seeds, coriander powder, turmeric powder, cinnamon powder, salt, and black pepper. Stir well to coat the vegetables in the spices and cook for 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the pot. Stir gently to combine the rice with the vegetables and spices.
- Pour in the 300 milliliters of water, bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15 minutes, or until the rice is cooked and the water is absorbed.
- Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with chopped fresh cilantro, and serve warm.
