Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon (or to taste)
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic, diced carrot, and diced bell pepper. Cook for another 5 minutes, stirring occasionally, until the vegetables soften.
  4. Add the cumin seeds, coriander powder, turmeric powder, cinnamon powder, salt, and black pepper. Stir well to coat the vegetables in the spices and cook for 1-2 minutes until fragrant.
  5. Drain the soaked rice and add it to the pot. Stir gently to combine the rice with the vegetables and spices.
  6. Pour in the 300 milliliters of water, bring to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15 minutes, or until the rice is cooked and the water is absorbed.
  7. Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with chopped fresh cilantro, and serve warm.
