Ingredients

  • Vegetable broth - 500 ml

  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until the onion becomes translucent.
  3. Add the diced carrot and bell pepper to the pan, cooking for an additional 5 minutes until they soften.
  4. Stir in the ground cumin, turmeric, salt, and black pepper, allowing the spices to toast for about 1 minute.
  5. Add the rinsed basmati rice and red lentils to the pan, stirring to combine with the vegetables and spices.
  6. Pour in the vegetable broth, bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice and lentils are cooked and the liquid is absorbed.
