Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until the onion becomes translucent.
- Add the diced carrot and bell pepper to the pan, cooking for an additional 5 minutes until they soften.
- Stir in the ground cumin, turmeric, salt, and black pepper, allowing the spices to toast for about 1 minute.
- Add the rinsed basmati rice and red lentils to the pan, stirring to combine with the vegetables and spices.
- Pour in the vegetable broth, bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice and lentils are cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff the rice with a fork.
