Ingredients

  • Basmati rice - 150 grams
  • Fresh green peas - 100 grams
  • Vegetable broth - 400 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the rinsed basmati rice and toast it for 2-3 minutes, stirring frequently.
  5. Pour in the vegetable broth, add the dried thyme, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid has been absorbed.
  7. After 15 minutes, add the fresh green peas on top of the rice, cover again, and let it steam for another 5 minutes.
  8. Remove from heat, fluff the rice with a fork, and stir in the chopped parsley. Adjust seasoning if necessary.
  9. Serve warm, garnished with additional parsley if desired.
