Ingredients
- Basmati rice - 150 grams
- Fresh green peas - 100 grams
- Vegetable broth - 400 ml
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the rinsed basmati rice and toast it for 2-3 minutes, stirring frequently.
- Pour in the vegetable broth, add the dried thyme, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid has been absorbed.
- After 15 minutes, add the fresh green peas on top of the rice, cover again, and let it steam for another 5 minutes.
- Remove from heat, fluff the rice with a fork, and stir in the chopped parsley. Adjust seasoning if necessary.
- Serve warm, garnished with additional parsley if desired.
