- Zucchini - 1 small, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic, diced carrot, bell pepper, and zucchini to the pan. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for an additional minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spices and vegetables.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
