  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic, diced carrot, bell pepper, and zucchini to the pan. Cook for another 5-7 minutes until the vegetables are tender.
  4. Stir in cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for an additional minute until fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
