- Basmati rice - 150 grams
- Frozen green peas - 100 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Shallot - 1, finely chopped
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear; drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and sauté for about 2 minutes until translucent.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Stir in the rinsed rice and toast for 2-3 minutes, stirring occasionally until the rice is lightly golden.
- Pour in the vegetable broth, and add salt and black pepper to taste. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the frozen peas and stir gently. Cover again and cook for an additional 5 minutes.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped parsley and mint before serving.
