Ingredients

  • Basmati rice - 150 grams
  • Frozen green peas - 100 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Shallot - 1, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear; drain well.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and sauté for about 2 minutes until translucent.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the rinsed rice and toast for 2-3 minutes, stirring occasionally until the rice is lightly golden.
  5. Pour in the vegetable broth, and add salt and black pepper to taste. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, add the frozen peas and stir gently. Cover again and cook for an additional 5 minutes.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with chopped parsley and mint before serving.
