Ingredients

  • Long-grain rice - 150 grams
  • Green olives, pitted and sliced - 100 grams
  • Black olives, pitted and sliced - 50 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Shallot, finely chopped - 1
  • Fresh parsley, chopped - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until softened and fragrant, about 2-3 minutes.
  3. Add the rinsed rice to the saucepan and stir well to coat the grains with the oil, cooking for another 2 minutes.
  4. Pour in the vegetable broth, and add the dried thyme, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice has absorbed all the liquid.
  5. Once the rice is cooked, remove it from heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice with a fork, then gently fold in the sliced green and black olives, and chopped parsley.
  7. Serve warm, garnished with additional parsley if desired.
