Ingredients
- Long-grain rice - 150 grams
- Green olives, pitted and sliced - 100 grams
- Black olives, pitted and sliced - 50 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Shallot, finely chopped - 1
- Fresh parsley, chopped - 2 tablespoons
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the long-grain rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until softened and fragrant, about 2-3 minutes.
- Add the rinsed rice to the saucepan and stir well to coat the grains with the oil, cooking for another 2 minutes.
- Pour in the vegetable broth, and add the dried thyme, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice has absorbed all the liquid.
- Once the rice is cooked, remove it from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then gently fold in the sliced green and black olives, and chopped parsley.
- Serve warm, garnished with additional parsley if desired.
