- Basmati rice - 150 grams
- Onions - 2 medium, thinly sliced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-12 minutes, stirring occasionally.
- Add the minced garlic, ground cumin, ground turmeric, salt, and black pepper to the onions. Cook for an additional 2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the onion mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon juice before serving.
