Ingredients

  • Basmati rice - 150 grams
  • Onions - 2 medium, thinly sliced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-12 minutes, stirring occasionally.
  3. Add the minced garlic, ground cumin, ground turmeric, salt, and black pepper to the onions. Cook for an additional 2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to combine with the onion mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon juice before serving.
