- Walnuts - 50 grams, chopped
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Thyme - 1 teaspoon, dried
- Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
- Stir in the rinsed basmati rice and cook for 2-3 minutes, allowing the rice to lightly toast and absorb the flavors.
- Pour in the vegetable broth, add the dried thyme, and season with salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then gently fold in the chopped walnuts and parsley before serving.
