Ingredients

  • Basmati rice - 150 grams
  • Walnuts - 50 grams, chopped
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Thyme - 1 teaspoon, dried
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.
  4. Stir in the rinsed basmati rice and cook for 2-3 minutes, allowing the rice to lightly toast and absorb the flavors.
  5. Pour in the vegetable broth, add the dried thyme, and season with salt and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, then gently fold in the chopped walnuts and parsley before serving.
