Ingredients

  • Basmati rice - 150 grams
  • Green or brown lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - a handful, chopped (for garnish)

Steps

  1. Rinse the basmati rice and lentils under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion and carrot. Sauté until softened, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed lentils, thyme, bay leaf, and vegetable broth. Bring to a boil, then reduce the heat to a simmer and cover. Cook for 20 minutes.
  5. Meanwhile, in a separate pot, bring 300 milliliters of water to a boil. Add the rinsed basmati rice and a pinch of salt. Reduce the heat to low, cover, and cook for 10-12 minutes until the rice is tender and the water is absorbed.
  6. Once the lentils are cooked, check for doneness and season with salt and black pepper to taste. Remove the bay leaf.
  7. Fluff the rice with a fork and mix it gently with the lentil mixture.
  8. Serve hot, garnished with chopped parsley.
