- Basmati rice - 150 grams
- Green or brown lentils - 100 grams
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Parsley - a handful, chopped (for garnish)
Steps
- Rinse the basmati rice and lentils under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion and carrot. Sauté until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed lentils, thyme, bay leaf, and vegetable broth. Bring to a boil, then reduce the heat to a simmer and cover. Cook for 20 minutes.
- Meanwhile, in a separate pot, bring 300 milliliters of water to a boil. Add the rinsed basmati rice and a pinch of salt. Reduce the heat to low, cover, and cook for 10-12 minutes until the rice is tender and the water is absorbed.
- Once the lentils are cooked, check for doneness and season with salt and black pepper to taste. Remove the bay leaf.
- Fluff the rice with a fork and mix it gently with the lentil mixture.
- Serve hot, garnished with chopped parsley.
