  • Basmati rice - 150 grams

  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Green peas - 100 grams (fresh or frozen)
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Vegetable broth - 400 milliliters
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced carrot, zucchini, and red bell pepper. Cook for about 5-7 minutes until the vegetables start to soften.
  5. Add the green peas, dried thyme, dried oregano, salt, and black pepper. Mix well.
  6. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
  7. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
