- Red bell pepper - 1, diced
- Green peas - 100 grams (fresh or frozen)
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Vegetable broth - 400 milliliters
- Dried thyme - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced carrot, zucchini, and red bell pepper. Cook for about 5-7 minutes until the vegetables start to soften.
- Add the green peas, dried thyme, dried oregano, salt, and black pepper. Mix well.
- Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
