- Green beans - 200 grams, trimmed and cut into 2 cm pieces
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the basmati rice to the saucepan, stirring to coat the grains with oil. Toast the rice for about 2 minutes until slightly fragrant.
- Pour in the vegetable broth, then add the thyme, salt, and black pepper. Stir well, bringing the mixture to a gentle boil.
- Reduce the heat to low, cover the saucepan, and simmer for 10 minutes.
- After 10 minutes, add the trimmed green beans on top of the rice without stirring. Cover again and cook for an additional 10 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork and gently mix in the parsley before serving.
