Ingredients

  • Long-grain rice - 150 grams
  • Green beans - 200 grams, trimmed and cut into 3 cm pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic to the pan and sauté for an additional 1 minute until fragrant.
  4. Stir in the rice, thyme, bay leaf, salt, and black pepper, cooking for 2-3 minutes until the rice is lightly toasted.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  6. After 15 minutes, add the green beans on top of the rice without stirring, cover again, and cook for another 5-7 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove the bay leaf, fluff the rice with a fork, and let it sit, covered, for 5 minutes.
  8. Garnish with chopped parsley before serving warm.
