- Dried apricots - 50 grams, chopped
- Almonds - 30 grams, sliced
- Walnuts - 30 grams, chopped
- Raisins - 30 grams
- Cinnamon powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add sliced almonds and chopped walnuts, toasting them for about 3-4 minutes until golden brown.
- Add the soaked and drained rice to the saucepan, stirring for 1-2 minutes to coat the rice in the oil and nuts.
- Pour in 300 ml of water, add salt, cinnamon, and black pepper. Stir gently to combine and bring to a boil.
- Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- After the rice is cooked, remove from heat and fluff with a fork. Gently fold in the chopped dried apricots and raisins.
- Let the rice sit covered for an additional 5 minutes, then serve garnished with fresh parsley.
