- Basmati rice - 150 grams
- Fresh green beans - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the fresh green beans and sauté for an additional 3-4 minutes until they are bright green and tender-crisp.
- Stir in the rinsed rice, thyme, salt, and pepper, mixing well to combine all the ingredients.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
