Ingredients

  • Basmati rice - 150 grams
  • Fresh green beans - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Add the fresh green beans and sauté for an additional 3-4 minutes until they are bright green and tender-crisp.
  4. Stir in the rinsed rice, thyme, salt, and pepper, mixing well to combine all the ingredients.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
