Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Long-grain rice - 150 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Red bell pepper (diced) - 1/2
  • Green peas (fresh or frozen) - 100 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced red bell pepper to the saucepan, cooking for another 2-3 minutes until softened.
  3. Stir in the paprika and turmeric, cooking for an additional 1 minute to release their flavors.
  4. Add the rice to the saucepan, stirring to coat it with the oil and spices. Cook for 2 minutes, allowing the rice to toast slightly.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the broth is absorbed.
  6. In the last 5 minutes of cooking, gently fold in the shrimp and green peas, covering the pot to let them steam until the shrimp are cooked through and pink.
  7. Season with salt and black pepper to taste. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
  8. Serve warm, garnished with fresh chopped parsley.
