  • Basmati rice - 150 grams
  • Green cabbage - 200 grams, finely shredded
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then set aside.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the shredded cabbage to the pot and cook for about 5 minutes, stirring occasionally, until it begins to soften.
  5. Stir in the rinsed rice, vegetable broth, bay leaf, thyme, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and discard the bay leaf.
  8. Serve warm, garnished with chopped parsley.
