- Green cabbage - 200 grams, finely shredded

- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then set aside.
- In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the shredded cabbage to the pot and cook for about 5 minutes, stirring occasionally, until it begins to soften.
- Stir in the rinsed rice, vegetable broth, bay leaf, thyme, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and discard the bay leaf.
- Serve warm, garnished with chopped parsley.
