  • Arborio rice - 150 grams
  • Mixed mushrooms (cremini, shiitake, and button) - 200 grams, sliced
  • Vegetable broth - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional for serving) - 30 grams, grated

Steps

  1. In a saucepan, heat the vegetable broth over low heat to keep it warm.
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.
  4. Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to toast slightly and absorb the flavors.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  6. Once the rice is cooked, season with salt and black pepper to taste. Stir in the chopped parsley, reserving some for garnish.
  7. Serve hot, topped with grated Parmesan cheese if desired, and garnished with additional parsley.
