- Fresh thyme - 1 teaspoon (chopped)
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams (grated, optional)
- Fresh parsley - for garnish (chopped)
Steps
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 5 minutes.
- Add the Arborio rice to the saucepan, stirring for 2-3 minutes until the rice is lightly toasted.
- Pour in the vegetable broth and add the bay leaf, thyme, salt, and pepper. Bring to a gentle simmer.
- Cover the saucepan and let the rice cook for about 18-20 minutes, stirring occasionally, until the rice is creamy and al dente.
- Once the rice is cooked, remove the bay leaf and stir in the chopped chestnuts. Cook for another 2-3 minutes to heat the chestnuts through.
- If using, stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with fresh parsley.
