  • Fresh thyme - 1 teaspoon (chopped)
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams (grated, optional)
  • Fresh parsley - for garnish (chopped)

Steps

  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 5 minutes.
  2. Add the Arborio rice to the saucepan, stirring for 2-3 minutes until the rice is lightly toasted.
  3. Pour in the vegetable broth and add the bay leaf, thyme, salt, and pepper. Bring to a gentle simmer.
  4. Cover the saucepan and let the rice cook for about 18-20 minutes, stirring occasionally, until the rice is creamy and al dente.
  5. Once the rice is cooked, remove the bay leaf and stir in the chopped chestnuts. Cook for another 2-3 minutes to heat the chestnuts through.
  6. If using, stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with fresh parsley.
