- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish (optional)
Steps
- Rinse the rice under cold water until the water runs clear to remove excess starch, then drain.
- Peel the carrots and cut them into small dice (about 0.5 cm). Finely chop the onion.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced carrots to the pan, cooking for an additional 3-4 minutes until the carrots begin to soften.
- Stir in the rice, dried thyme, and bay leaf, cooking for 1-2 minutes to toast the rice slightly.
- Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes or until the rice is cooked and has absorbed the liquid.
- Remove the bay leaf and fluff the rice with a fork. Garnish with fresh parsley if desired before serving.
