Ingredients

  • Long-grain rice - 150 grams
  • Carrots - 2 medium (about 150 grams)
  • Onion - 1 small (about 75 grams)
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish (optional)

Steps

  1. Rinse the rice under cold water until the water runs clear to remove excess starch, then drain.
  2. Peel the carrots and cut them into small dice (about 0.5 cm). Finely chop the onion.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and diced carrots to the pan, cooking for an additional 3-4 minutes until the carrots begin to soften.
  5. Stir in the rice, dried thyme, and bay leaf, cooking for 1-2 minutes to toast the rice slightly.
  6. Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes or until the rice is cooked and has absorbed the liquid.
  8. Remove the bay leaf and fluff the rice with a fork. Garnish with fresh parsley if desired before serving.
