- Arborio rice - 150 grams
- Dried cèpes (porcini mushrooms) - 30 grams
- Vegetable broth - 500 ml
- Shallot - 1, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese (optional, for serving) - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the dried cèpes in warm water for about 20 minutes until rehydrated. Drain and reserve the soaking liquid.
- In a saucepan, heat the vegetable broth and add the reserved mushroom soaking liquid. Keep warm over low heat.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the Arborio rice, toasting it lightly for about 2 minutes until it becomes slightly translucent.
- Gradually add the warm broth mixture, one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more. Continue this process for about 15-18 minutes, or until the rice is al dente.
- In the last 5 minutes of cooking, add the rehydrated cèpes to the skillet, stirring them into the rice.
- Once the rice is cooked, remove from heat, and stir in the chopped parsley. Season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
