Ingredients

  • Arborio rice - 150 grams
  • Fresh asparagus - 200 grams
  • Vegetable broth - 500 milliliters
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Butter - 15 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Trim the woody ends of the asparagus and cut the spears into 2-inch pieces.
  2. In a saucepan, heat the vegetable broth over low heat to keep it warm.
  3. In another large pan, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 3 minutes.
  4. Add the minced garlic and cook for an additional minute, being careful not to burn it.
  5. Stir in the Arborio rice and cook for 2 minutes, stirring frequently until the rice is slightly toasted.
  6. Add a ladle of warm vegetable broth to the rice, stirring continuously until the liquid is absorbed.
  7. Continue adding the broth, one ladle at a time, stirring and allowing each addition to be absorbed before adding more, until the rice is creamy and al dente, about 18-20 minutes.
  8. In the last 5 minutes of cooking, add the asparagus pieces to the rice, stirring gently until they are tender yet still bright green.
  9. Remove from heat and stir in the butter and grated Parmesan cheese. Season with salt and black pepper to taste.
  10. Serve hot, garnished with fresh parsley.
