- Arborio rice - 150 grams
- Fresh asparagus - 200 grams
- Vegetable broth - 500 milliliters
- Shallot - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Butter - 15 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Trim the woody ends of the asparagus and cut the spears into 2-inch pieces.
- In a saucepan, heat the vegetable broth over low heat to keep it warm.
- In another large pan, heat the olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 3 minutes.
- Add the minced garlic and cook for an additional minute, being careful not to burn it.
- Stir in the Arborio rice and cook for 2 minutes, stirring frequently until the rice is slightly toasted.
- Add a ladle of warm vegetable broth to the rice, stirring continuously until the liquid is absorbed.
- Continue adding the broth, one ladle at a time, stirring and allowing each addition to be absorbed before adding more, until the rice is creamy and al dente, about 18-20 minutes.
- In the last 5 minutes of cooking, add the asparagus pieces to the rice, stirring gently until they are tender yet still bright green.
- Remove from heat and stir in the butter and grated Parmesan cheese. Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
