Ingredients
- Arborio rice - 150 grams
- Artichoke hearts (canned or frozen) - 200 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the Arborio rice to the saucepan and stir for 1-2 minutes to toast the rice slightly.
- Pour in the vegetable broth and bring to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for about 15-18 minutes, or until the rice is creamy and has absorbed most of the broth, stirring occasionally.
- While the rice cooks, drain and rinse the artichoke hearts if using canned. If using frozen, thaw them.
- Once the rice is cooked, gently fold in the artichoke hearts, chopped parsley, lemon juice, salt, and black pepper.
- Cook for an additional 2-3 minutes to heat the artichokes through.
- Serve warm, sprinkled with nutritional yeast for added flavor.
