Ingredients

  • Arborio rice - 150 grams
  • Artichoke hearts (canned or frozen) - 200 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutritional yeast - 2 tablespoons

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the Arborio rice to the saucepan and stir for 1-2 minutes to toast the rice slightly.
  5. Pour in the vegetable broth and bring to a boil, then reduce the heat to low and cover the saucepan.
  6. Simmer for about 15-18 minutes, or until the rice is creamy and has absorbed most of the broth, stirring occasionally.
  7. While the rice cooks, drain and rinse the artichoke hearts if using canned. If using frozen, thaw them.
  8. Once the rice is cooked, gently fold in the artichoke hearts, chopped parsley, lemon juice, salt, and black pepper.
  9. Cook for an additional 2-3 minutes to heat the artichokes through.
  10. Serve warm, sprinkled with nutritional yeast for added flavor.
