- Arborio rice - 150 grams
- Dry white wine - 150 ml
- Low-sodium vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Shallot - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Zucchini - 1 small, diced
- Bell pepper - 1 small, diced
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Pepper - to taste
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and garlic, sautéing until softened and fragrant, about 3 minutes.
- Stir in the diced zucchini and bell pepper, cooking for an additional 5 minutes until the vegetables are slightly tender.
- Add the Arborio rice to the pan, stirring to coat the grains with the oil and vegetables for about 2 minutes.
- Pour in the white wine, stirring continuously until it is mostly absorbed by the rice.
- Begin to add the vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Once the rice is cooked, stir in the fresh thyme, parsley, salt, and pepper to taste. Remove from heat and let it sit for 2 minutes before serving.
