Ingredients

  • Arborio rice - 150 grams
  • Dry white wine - 150 ml
  • Low-sodium vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 small, diced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and garlic, sautéing until softened and fragrant, about 3 minutes.
  2. Stir in the diced zucchini and bell pepper, cooking for an additional 5 minutes until the vegetables are slightly tender.
  3. Add the Arborio rice to the pan, stirring to coat the grains with the oil and vegetables for about 2 minutes.
  4. Pour in the white wine, stirring continuously until it is mostly absorbed by the rice.
  5. Begin to add the vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  6. Once the rice is cooked, stir in the fresh thyme, parsley, salt, and pepper to taste. Remove from heat and let it sit for 2 minutes before serving.
