Ingredients

  • Long-grain rice - 150 grams
  • Canned tuna (in olive oil or water) - 200 grams, drained
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Frozen peas - 100 grams
  • Vegetable broth - 300 ml
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced red bell pepper to the saucepan. Cook for an additional 2-3 minutes until the pepper softens.
  3. Stir in the long-grain rice, allowing it to toast slightly for about 2 minutes while stirring frequently.
  4. Pour in the vegetable broth, and add the dried thyme, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover the saucepan. Simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  5. Once the rice is cooked, gently fold in the drained tuna and frozen peas. Stir until heated through, about 2-3 minutes.
  6. Remove from heat and let sit for a couple of minutes before serving. Garnish with fresh parsley and serve warm.
