  • Cauliflower - 300 grams
  • Salmon fillets - 200 grams

  • Shallot - 1, finely chopped
  • Cream cheese - 50 grams
  • Fresh dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves from the cauliflower and cut it into florets. Using a food processor, pulse the florets until they resemble rice grains.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and chopped shallot, sautéing until they are fragrant and translucent, about 3-4 minutes.
  3. Add the cauliflower rice to the skillet, stirring well to combine with the garlic and shallot. Season with salt and pepper, and cook for about 5-7 minutes, stirring occasionally until the cauliflower is tender.
  4. While the cauliflower rice is cooking, season the salmon fillets with salt, pepper, and lemon juice. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat.
  5. Place the salmon fillets in the skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
  6. Once the salmon is cooked, remove it from the skillet and set aside. In the same skillet, add the cream cheese and chopped dill, stirring until the cream cheese is melted and well combined.
  7. Flake the cooked salmon into bite-sized pieces and gently fold it into the creamy mixture in the skillet. Remove from heat.
  8. Serve the salmon mixture over the cauliflower rice, garnished with additional dill if desired.
