- Boneless chicken thighs - 300 grams
- Long-grain rice - 150 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.
- Add the diced carrot and bell pepper to the skillet, cooking for another 5 minutes until softened.
- Season the boneless chicken thighs with paprika, thyme, salt, and black pepper. Add to the skillet and sear until browned on all sides, about 5-7 minutes.
- Stir in the long-grain rice, coating it with the oil and spices for about 1-2 minutes.
- Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
