  • Boneless chicken thighs - 300 grams
  • Long-grain rice - 150 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until the onion is translucent.
  2. Add the diced carrot and bell pepper to the skillet, cooking for another 5 minutes until softened.
  3. Season the boneless chicken thighs with paprika, thyme, salt, and black pepper. Add to the skillet and sear until browned on all sides, about 5-7 minutes.
  4. Stir in the long-grain rice, coating it with the oil and spices for about 1-2 minutes.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
