Ingredients

  • Jasmine rice - 150 grams
  • Fresh basil leaves - 40 grams
  • Pine nuts - 30 grams
  • Garlic - 1 clove
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Vegetable broth - 400 milliliters

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  3. While the rice is cooking, prepare the pesto. In a food processor, combine fresh basil leaves, pine nuts, garlic, nutritional yeast, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  4. Once the rice is cooked, fluff it with a fork and transfer it to a large mixing bowl.
  5. Add the prepared pesto to the rice and mix well until the rice is evenly coated.
  6. Serve warm, garnished with extra pine nuts and a drizzle of olive oil if desired.
