- Pine nuts - 30 grams

- Nutritional yeast - 2 tablespoons
- Olive oil - 3 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Vegetable broth - 400 milliliters
Steps
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- While the rice is cooking, prepare the pesto. In a food processor, combine fresh basil leaves, pine nuts, garlic, nutritional yeast, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy.
- Once the rice is cooked, fluff it with a fork and transfer it to a large mixing bowl.
