- Arborio rice - 150 grams
- Pancetta, diced - 100 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese, grated - 30 grams (optional)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove and set aside, leaving the rendered fat in the pan.
- In the same pan, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the Arborio rice to the pan, stirring for 2-3 minutes until the rice is coated with the oil and slightly toasted.
- Pour in the chicken broth and add the thyme. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Once cooked, fluff the rice with a fork and stir in the crispy pancetta. Season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
