  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  2. Add the diced carrot and bell pepper to the saucepan, cooking for an additional 5 minutes until slightly softened.
  3. Stir in the Arborio rice, allowing it to toast for about 2 minutes, stirring frequently to coat the rice with oil.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  5. After 15 minutes, add the zucchini and green peas, stirring gently. Cover and cook for another 5-7 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat, stir in the fresh thyme, and season with salt and black pepper to taste. Let it sit covered for 5 minutes before serving.
