- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the saucepan, cooking for an additional 5 minutes until slightly softened.
- Stir in the Arborio rice, allowing it to toast for about 2 minutes, stirring frequently to coat the rice with oil.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the zucchini and green peas, stirring gently. Cover and cook for another 5-7 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat, stir in the fresh thyme, and season with salt and black pepper to taste. Let it sit covered for 5 minutes before serving.
