  • Heavy cream - 120 ml
  • Grated Gruyere cheese - 100 grams
  • Butter - 30 grams
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3-4 minutes.
  2. Stir in the cauliflower rice and cook for another 5-7 minutes, until slightly tender.
  3. Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow it to simmer for 2-3 minutes.
  4. Add the grated Gruyere cheese, salt, black pepper, and nutmeg. Stir continuously until the cheese is fully melted and the mixture is creamy.
  5. Remove from heat and stir in the chopped parsley. Serve hot, garnished with additional parsley if desired.
