- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3-4 minutes.
- Stir in the cauliflower rice and cook for another 5-7 minutes, until slightly tender.
- Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow it to simmer for 2-3 minutes.
- Add the grated Gruyere cheese, salt, black pepper, and nutmeg. Stir continuously until the cheese is fully melted and the mixture is creamy.
