Ingredients

  • Basmati rice - 150 grams
  • Coconut milk - 200 ml
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 100 grams, frozen or fresh
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetable broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté for about 3-4 minutes until the onion is translucent.
  3. Add the diced carrot and bell pepper to the saucepan and cook for another 5 minutes, stirring occasionally.
  4. Stir in the curry powder and turmeric, cooking for an additional 1-2 minutes until fragrant.
  5. Add the rinsed rice to the saucepan, stirring to coat the grains with the spices and vegetables.
  6. Pour in the coconut milk and vegetable broth, and season with salt and black pepper to taste. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let simmer for 15 minutes until the rice is cooked and has absorbed the liquid.
  8. After 15 minutes, remove from heat and stir in the green peas. Let it sit covered for another 5 minutes.
  9. Fluff the rice with a fork and serve hot, garnished with fresh cilantro.
