Ingredients
- Basmati rice - 150 grams
- Coconut milk - 200 ml
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams, frozen or fresh
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Curry powder - 1 tablespoon
- Turmeric - 1 teaspoon
- Olive oil - 1 tablespoon
- Vegetable broth - 250 ml
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté for about 3-4 minutes until the onion is translucent.
- Add the diced carrot and bell pepper to the saucepan and cook for another 5 minutes, stirring occasionally.
- Stir in the curry powder and turmeric, cooking for an additional 1-2 minutes until fragrant.
- Add the rinsed rice to the saucepan, stirring to coat the grains with the spices and vegetables.
- Pour in the coconut milk and vegetable broth, and season with salt and black pepper to taste. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let simmer for 15 minutes until the rice is cooked and has absorbed the liquid.
- After 15 minutes, remove from heat and stir in the green peas. Let it sit covered for another 5 minutes.
- Fluff the rice with a fork and serve hot, garnished with fresh cilantro.
