Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
- Add the rinsed rice to the saucepan, stirring to coat the rice in the oil and garlic.
- Pour in the vegetable broth, fresh lemon juice, lemon zest, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
