  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain well.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  3. Add the rinsed rice to the saucepan, stirring to coat the rice in the oil and garlic.
  4. Pour in the vegetable broth, fresh lemon juice, lemon zest, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork and stir in the chopped parsley before serving.
