- Chorizo sausage - 100 grams, diced

- Red bell pepper - 1, diced
- Chicken or vegetable broth - 400 ml
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced chorizo and red bell pepper to the pan. Cook for another 5 minutes, stirring occasionally, until the chorizo is browned and the peppers are softened.
- Stir in the rice, paprika, thyme, salt, and black pepper, mixing well to coat the rice with the spices.
- Pour in the chicken or vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-18 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat. Let it sit covered for 5 minutes before fluffing with a fork. Garnish with fresh parsley before serving.
