  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the diced chorizo and red bell pepper to the pan. Cook for another 5 minutes, stirring occasionally, until the chorizo is browned and the peppers are softened.
  3. Stir in the rice, paprika, thyme, salt, and black pepper, mixing well to coat the rice with the spices.
  4. Pour in the chicken or vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-18 minutes or until the rice is cooked and liquid is absorbed.
  5. Remove from heat. Let it sit covered for 5 minutes before fluffing with a fork. Garnish with fresh parsley before serving.
