  • Pork shoulder - 300 grams
  • Lard or unsalted butter - 50 grams
  • Shallots - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • White wine - 100 ml
  • Water - 100 ml

Steps

  1. Cut the pork shoulder into 2-3 cm cubes and season with salt and black pepper.
  2. In a heavy-bottomed pot, melt the lard or butter over medium heat and add the chopped shallots and minced garlic, cooking until softened.
  3. Add the pork cubes to the pot and sear them on all sides until browned.
  4. Stir in the dried thyme, bay leaf, white wine, and water, ensuring the meat is submerged.
  5. Bring the mixture to a gentle simmer, then cover and reduce the heat to low, cooking for about 2-3 hours until the pork is tender and easily shredded.
  6. Remove the pot from heat and let it cool slightly before shredding the pork with two forks.
  7. Mix the shredded pork with the cooking liquid until well combined, adjusting seasoning as necessary.
  8. Transfer the rillettes to a serving dish and refrigerate for at least 1 hour before serving.
