- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- White wine - 100 ml
- Water - 100 ml
Steps
- Cut the pork shoulder into 2-3 cm cubes and season with salt and black pepper.
- In a heavy-bottomed pot, melt the lard or butter over medium heat and add the chopped shallots and minced garlic, cooking until softened.
- Add the pork cubes to the pot and sear them on all sides until browned.
- Stir in the dried thyme, bay leaf, white wine, and water, ensuring the meat is submerged.
- Bring the mixture to a gentle simmer, then cover and reduce the heat to low, cooking for about 2-3 hours until the pork is tender and easily shredded.
- Remove the pot from heat and let it cool slightly before shredding the pork with two forks.
- Mix the shredded pork with the cooking liquid until well combined, adjusting seasoning as necessary.
- Transfer the rillettes to a serving dish and refrigerate for at least 1 hour before serving.
