- Vegetable broth - 300 milliliters
- Olive oil - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and set aside.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Add minced garlic and thyme, and cook for an additional 1-2 minutes until fragrant.
- Stir in the lentils and pour in the vegetable broth. Bring to a boil, then reduce heat to low and cover. Simmer for 25-30 minutes or until lentils are tender.
- Once cooked, drain any excess liquid if necessary, and transfer the lentil mixture to a bowl.
- Add the remaining olive oil, Dijon mustard, lemon juice, salt, and pepper. Use a fork or potato masher to blend the mixture to your desired consistency, keeping it slightly chunky for texture.
