Ingredients

  • Duck legs - 400 grams
  • Duck fat - 100 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 300 ml

Steps

  1. In a large pot, combine the duck legs, duck fat, finely chopped onion, minced garlic, thyme, bay leaf, salt, black pepper, and water.
  2. Bring the mixture to a gentle simmer over low heat, then cover and let it cook for about 2 to 2.5 hours until the duck is tender and easily pulls apart.
  3. Remove the duck legs from the pot and let them cool slightly before shredding the meat, discarding the skin and bones.
  4. In a bowl, combine the shredded duck meat with the remaining cooking liquid, mixing until well combined.
  5. Transfer the mixture into a serving dish or individual ramekins and refrigerate for at least 2 hours to allow the flavors to meld and the fat to set.
