Ingredients

  • Duck breast - 200 grams
  • Duck fat - 50 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, fresh or dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 100 milliliters

Steps

  1. In a medium pot, melt the duck fat over low heat.
  2. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
  3. Season the duck breast with salt, black pepper, thyme, and add it to the pot.
  4. Pour in the water and add the bay leaf. Cover the pot and let it simmer gently for about 1.5 hours, until the duck is tender and easily shreds.
  5. Remove the duck from the pot and let it cool slightly. Shred the meat with a fork, discarding any skin or bones.
  6. Return the shredded duck to the pot with the fat and mix well. Cook uncovered for an additional 10 minutes to allow the flavors to meld.
  7. Transfer the rillettes to a small bowl or jar, cover, and refrigerate for at least 2 hours before serving to allow it to set.
