- Duck breast - 200 grams
- Duck fat - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, fresh or dried
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 milliliters
Steps
- In a medium pot, melt the duck fat over low heat.
- Add the chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
- Season the duck breast with salt, black pepper, thyme, and add it to the pot.
- Pour in the water and add the bay leaf. Cover the pot and let it simmer gently for about 1.5 hours, until the duck is tender and easily shreds.
- Remove the duck from the pot and let it cool slightly. Shred the meat with a fork, discarding any skin or bones.
- Return the shredded duck to the pot with the fat and mix well. Cook uncovered for an additional 10 minutes to allow the flavors to meld.
- Transfer the rillettes to a small bowl or jar, cover, and refrigerate for at least 2 hours before serving to allow it to set.
