Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Cauliflower - 400 grams, riced
  • Red wine - 200 ml, preferably Burgundy
  • Chicken broth - 100 ml
  • Bacon - 100 grams, diced
  • Shallots - 2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrots - 1 medium, sliced
  • Mushrooms - 150 grams, sliced
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish, chopped

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
  2. In the same skillet, add the chicken thighs seasoned with salt and pepper. Sear them for about 5 minutes on each side until golden brown. Remove the chicken and set aside.
  3. Add the shallots, garlic, carrots, and mushrooms to the skillet. Sauté for 3-4 minutes until the vegetables begin to soften.
  4. Pour in the red wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Add the thyme, bay leaf, and the cooked bacon back into the skillet.
  5. Return the chicken to the skillet, cover, and let it simmer on low heat for about 20 minutes, or until the chicken is cooked through.
  6. While the chicken is simmering, steam or microwave the riced cauliflower according to package instructions until tender, about 5-7 minutes.
  7. Remove the chicken from the skillet, slice it, and serve it over the riced cauliflower. Spoon the sauce and vegetables over the top and garnish with chopped parsley.
