Ingredients
- Ribeye steak - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 200 grams, halved
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
- Rub the marinade all over the ribeye steak, ensuring it is well coated, and let it marinate for at least 10 minutes at room temperature.
- While the steak is marinating, prepare the vegetables by tossing the cherry tomatoes, zucchini, and red onion with a drizzle of olive oil, salt, and pepper.
- Place the marinated ribeye steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
- In the last 5 minutes of grilling, add the prepared vegetables to the grill, cooking until they are tender and slightly charred.
- Once cooked, remove the steak and vegetables from the grill and let the steak rest for 5 minutes.
- Slice the ribeye steak against the grain and serve it alongside the grilled vegetables, drizzled with balsamic vinegar.
