Ingredients

  • Ribeye steak - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams, halved
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
  3. Rub the marinade all over the ribeye steak, ensuring it is well coated, and let it marinate for at least 10 minutes at room temperature.
  4. While the steak is marinating, prepare the vegetables by tossing the cherry tomatoes, zucchini, and red onion with a drizzle of olive oil, salt, and pepper.
  5. Place the marinated ribeye steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  6. In the last 5 minutes of grilling, add the prepared vegetables to the grill, cooking until they are tender and slightly charred.
  7. Once cooked, remove the steak and vegetables from the grill and let the steak rest for 5 minutes.
  8. Slice the ribeye steak against the grain and serve it alongside the grilled vegetables, drizzled with balsamic vinegar.
