- Zucchini - 2 medium
- Eggplant - 100 grams, diced
- Red bell pepper - 1, diced
- Yellow bell pepper - 1, diced
- Tomato - 2 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish (optional)
Steps
- Using a spiralizer, create zoodles from the zucchini and set aside.
- In a large skillet, heat olive oil over medium heat and add the chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.
- Add the diced eggplant and cook for another 5 minutes, stirring occasionally, until softened.
- Stir in the diced red and yellow bell peppers, and continue to cook for an additional 5 minutes.
- Add the diced tomatoes, dried thyme, dried basil, salt, and black pepper. Simmer for 10-15 minutes until the vegetables are tender and the sauce has thickened slightly.
- While the ratatouille is simmering, lightly sauté the zoodles in a separate pan over medium heat for about 2-3 minutes to warm them up without losing their crunch.
- To serve, place a bed of zoodles on each plate and top with the ratatouille mixture. Garnish with fresh basil if desired.
