  • Garlic - 2 cloves, minced
  • Fresh basil - 10 grams, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the diced zucchini, eggplant, red bell pepper, cherry tomatoes, minced garlic, olive oil, thyme, salt, and black pepper.
